A kitchen scrubber, also known as a kitchen exhaust scrubber or kitchen hood scrubber, is a specialized component of a commercial kitchen ventilation system designed to remove grease, smoke, odors, and other airborne contaminants generated during cooking processes. It is typically installed downstream of the kitchen hood or exhaust hood and before the exhaust fan in the ventilation system.
Capture Hood: The kitchen scrubber begins with a capture hood or capture device installed above cooking appliances such as stoves, grills, fryers, and ovens. The capture hood captures and contains airborne contaminants, grease, and smoke emitted during cooking.
Grease Filters : Grease filters, also known as baffle filters or grease baffles, are installed within the capture hood to capture grease particles from the airstream. These filters are designed with baffles or fins that allow grease-laden air to pass through while trapping grease particles, preventing them from entering the rest of the ventilation system.
Scrubbing Section: The captured air and contaminants are then directed into the scrubbing section of the kitchen scrubber. In this section, the air passes through a series of water sprays or misting nozzles, where water is used to wash and scrub the air, removing grease, smoke, odors, and other particulate matter.
